What's Cooking Wednesday

What a week it's been so far.  It's gone quick for the most part, but I'm EXHAUSTED.  I think I was getting used to those cold delays, early releases, and snow days.  What am I going to do when spring comes?  EGADS!!  These 5 day work weeks after all those crazy days are KILLERS! 

This week I wasn't sure what I wanted to share with y'all.  I'm usually into my junkfoods, but just wasn't feeling the cupcakes/cookies.  I've put myself back into my "pinnercising" mode--meaning I hop on the treadmill for my walking, and pin then.  I pin so many sweet treats while I'm on there, and then I think...I better pin some exercise ones too.  I think they counter each other out, right?  The only problem is---I will end up making the treats, and probably not doing all those great exercises.

I had strawberries that I needed to use--and I thought...hmmm.........what about muffins?  I need something to make when I'm on the go.  I don't know how many times I don't allow myself enough time for breakfast, and then I'm eating my Luna bar at 10:00 (or sometimes my breakfast becomes my lunch).  I thought if I made some muffins, I could have something quick to grab on the way out the door before heading into work.   
 
So I looked through my pinterest boards, and my recipe books, and came up with a muffin.

 BUT, if you know anything about me or my cooking style---I have a hard time following a recipe.  Actually, my husband saw this "funny" and thought that it fit me well.


It's so true.  I always think I can make it better.  Now, I'm not sure if mine is better, as I never made the "real" recipe.  HOWEVER, the muffins turned out pretty yummy.

Here's what I made.  It's a strawberry chocolate chunk muffin.


The recipe base for the muffins is very similar.  I opted not using orange juice, and instead of a 1/2 c. of chocolate chips, I used half a bag of chocolate chunks.  It's close, right? ;)  Does it help if it was Dark Chocolate.  That's supposed to be good for you right?

A little step by step--because this is SUPER easy!

Most recipes call for you to combine this in a small bowl, and then add this, etc.  I HATE washing all my dishes, or loading the dishwasher, so I cut out that step.  

If I'm using my stand mixer, I seriously USUALLY dump it all in at one time ;)
Here's the gooey mess before folding in the strawberries and chocolate chunks.  

Add a few strawberries
Fold in (Stir) chocolate chunks
Fill muffin cups 2/3 full.  Remember to use liners, or spray with Pam.
Bake at 375 for about 20 minutes. 
 (I use convection bake on my oven--so it was 350 for 20 minutes exactly)
And there ya have it--a completely different recipe than what I started with ;)

But they are good.  My son (who doesn't like ANYTHING) liked them....so they have to be good, right? :)

  1. DeAnne, you are a woman after my own heart! I have a daughter who won't eat ANYTHING!! Makes for a challenging life at times, does it not?? Also loved the retro cooking cartoon. I am addicted to watching English cooking shows, but we can't get half the ingredients for them here in Oz, so my finished products often end up baring little resemblance to the original. Makes life fun!!

  6. They look DELISH DeAnne! And they definitely have to be good for you if that's dark chocolate ;) I love that comic!! I am exactly the same way with recipes.. and then I don't write it down or anything so the next time I make it it's different again lol! Thanks for sharing the recipe!
